This grilled lamb chops are so simple and easy to make but taste incredibly amazing. It’s crispy with the grilled marks on the outside and soft and juicy inside. I love oven-baked potatoes as a side, but this recipe goes pretty well with French fries. Also, you can use sweet potatoes instead of Yukon yellow potatoes for a healthier choice.

  • Mix crushed garlic, rosemary, thyme, black pepper, and salt. Pour in olive oil and mix into a paste. Rub the paste on both sides of the lamb chops and let them marinate for about 20 minutes in room temperature.
  • While your lamb chops are marinating. Chop your potatoes in 1inch cubes. Place them on a baking sheet lined with parchment paper.
  • Drizzle olive oil and season with salt and pepper. Bake them in the oven on 400 degrees F for 15 minutes.
  • For lamb chops, heat a grill pan over high heat until almost smoking, add the chops and sear for about 3 minutes each side.
