Grilled Lamb Chops

This grilled lamb chops are so simple and easy to make but taste incredibly amazing. It's crispy with the grilled marks on the outside and soft and juicy inside. I love oven-baked potatoes as a side, but this recipe goes pretty well with French fries. Also, you can use sweet potatoes instead of Yukon yellow potatoes for a healthier choice.

Ingredients
  • 2 large garlic cloves (crushed)
  • 1 tbsp fresh rosemary leaves (Minced)
  • 1 tbsp fresh thyme leaves (Minced)
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 3 tbsp extra-virgin olive oil
  • 6 lamb chops
  • 4 Yukon yellow potatoes (for side)
Instructions
  1. Mix crushed garlic, rosemary, thyme, black pepper, and salt. Pour in olive oil and mix into a paste. Rub the paste on both sides of the lamb chops and let them marinate for about 20 minutes in room temperature.
  2. While your lamb chops are marinating. Chop your potatoes in 1inch cubes. Place them on a baking sheet lined with parchment paper.
  3. Drizzle olive oil and season with salt and pepper. Bake them in the oven on 400 degrees F for 15 minutes.
  4. For lamb chops, heat a grill pan over high heat until almost smoking, add the chops and sear for about 3 minutes each side.
