Everywhere you look, Pumpkin seems to be the star of the show right now, and with good reason! It’s incredible food; it has a beautiful taste and aroma, and the entire kitchen smells like a holiday when you cook anything with Pumpkin.

Pumpkin is one of my family’s favorite foods. I love the traditional pie, creamy soups, and carved up with silly faces left on the porch.

One of my favorite holiday appetizers is pumpkin salsa with a pile of freshly chopped jalapenos and saute onion and garlic. This Pumpkin Salsa has all that goodness going on!

Not only is it amazing with any tacos, especially pork, but the Pumpkin Salsa tastes gorgeous served with chicken or in the classic chips and salsa or used anywhere you need a great tasting salsa kick.

  • In a saute pan, heat Olive Oil over medium heat. Add chopped fresh Onions and Garlic and saute until onions start to turn translucent.
  • Add fresh chopped tomatoes and jalapeños and saute for about 2 minutes.
  • Add in the drained, chopped (canned) Tomatoes, Pumpkin puree, Salt, Sugar, and remaining spices.
  • Cook for 8 - 10 minutes. Set aside to cool. Store in an airtight container for up to 2 weeks. Enjoy!
