Ingredients
  • 1/2 cup unsalted butter (softened)
  • 1/3 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 1/2 cup creamy peanut butter
  • 1 large egg
  • 1 1/2 cup cups all-purpose flour
  • 3/4 tsp baking soda
  • 1/2 tsp baking powder
  • 1 pinch salt
  • 1/2 cup Additional granulated sugar
Instructions
  1. Preheat the oven to 375 degrees F. Lined a cookie sheet with parchment paper and set aside.
  2. In a large bowl, beat granulated sugar, the brown sugar, peanut butter, butter, egg, and vanilla extract with electric mixer on medium speed, or mix with a spoon, until well blended.
  3. Stir in flour, baking soda, baking powder, and salt until dough forms.
  4. Scoop the dough into 1-inch balls with cookie scooper or two spoons.
  5. roll the cookie balls in additional granulated sugar. Place your cookies on cookie sheets, about 2 inches apart.
