Orange Blue Cheese Salad

I first made this Orange Blue Cheese Salad for Thanksgiving office potluck a couple of years ago as a side dish and everybody liked it. This recipe was inspired after I made my Apple Cranberry walnut salad. this salad is so easy to make, it's so tasty and has few ingredients that easily can be found in any grocery store. I like to use blue cheese in this recipe but you can leave that out if you want.

Ingredients
  • 1 heads of Batavia lettuce
  • 1 orange (peel and sliced)
  • 1/2 cup chopped pecan
  • 1/2 cup dried cranberry
  • 1/3 cup blue cheese (crumbled)
  • For The Lemon Vinaigrette
  • 1 tbsp red wine vinegar
  • 2 tbsp orange juice and zest
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • 1/4 cup extra-virgin olive oil
  • 1/4 tsp salt
  • 1 pinch black pepper
Instructions
  1. To make the dressing, whisk together olive oil, red wine vinegar, orange juice, orange zest, honey, Dijon mustard, salt and pepper in a small bowl; set aside.
  2. To assemble the salad, place chopped lettuce in a large bowl. Top with orange slices, pecans, cranberries, and blue cheese. Pour the dressing on top of the salad and gently toss to combine.
  3. Serve immediately. Enjoy
