Orange Blue Cheese Salad
I first made this Orange Blue Cheese Salad for Thanksgiving office potluck a couple of years ago as a side dish and everybody liked it. This recipe was inspired after I made my Apple Cranberry walnut salad. this salad is so easy to make, it's so tasty and has few ingredients that easily can be found in any grocery store. I like to use blue cheese in this recipe but you can leave that out if you want.

For The Lemon Vinaigrette

red wine vinegar

orange juice and zest

honey

Dijon mustard

extra-virgin olive oil

salt

black pepper
Instructions

To make the dressing, whisk together olive oil, red wine vinegar, orange juice, orange zest, honey, Dijon mustard, salt and pepper in a small bowl; set aside.

To assemble the salad, place chopped lettuce in a large bowl. Top with orange slices, pecans, cranberries, and blue cheese. Pour the dressing on top of the salad and gently toss to combine.
