I first made this Orange Blue Cheese Salad for Thanksgiving office potluck a couple of years ago as a side dish and everybody liked it. This recipe was inspired after I made my Apple Cranberry walnut salad. this salad is so easy to make, it’s so tasty and has few ingredients that easily can be found in any grocery store. I like to use blue cheese in this recipe but you can leave that out if you want.

- For The Lemon Vinaigrette
Instructions
- To make the dressing, whisk together olive oil, red wine vinegar, orange juice, orange zest, honey, Dijon mustard, salt and pepper in a small bowl; set aside.
- To assemble the salad, place chopped lettuce in a large bowl. Top with orange slices, pecans, cranberries, and blue cheese. Pour the dressing on top of the salad and gently toss to combine.
- Serve immediately. Enjoy
