Grilled Chicken With Chili Lime Corn

Ingredients
  • 12 oz chicken breast
  • 2 ears corn (cut in half)
  • 8 oz green beans
  • 2 tbsp BBQ sauce
  • 1/4 tsp kosher salt
  • 1/4 tsp freshly ground black pepper
  • 1 lime (cut in wedges, for serving)
  • For Chilli butter
  • 3 tbsp butter
  • 1 tsp grated lime zest
  • 1 tbsp lime juice
  • 1 tsp chili powder
  • 1/2 tsp cumin
Instructions
  1. Place a grill pan over high heat. Add one 1 tsp olive oil. Brush BBQ Sause on each side of the chicken breast and add them to the hot pan. Cook until browned about 7 minutes each side.
  2. While chicken grills, place corn on hot grill and cook until tender.
  3. At the same time, cook beans using and other medium size pan and place on medium-high heat. And one tsp olive oil, add green beans and season with salt and pepper to the hot pan.
  4. Cover reduce the heat and cook until vegetables are tender for about 5-7 minutes. Remove from burner and stir in 1 tbsp butter, cover, and set aside.
  5. Meanwhile, in a small bowl, stir together 2 tbsp butter, lime zest and juice, chili powder, and cumin. Season generously with salt and pepper.
  6. Place chili-lime butter on corn and season with salt and pepper.
  7. Transfer chicken to a plate. Squeeze one lime wedge over each breast.
  8. Plate dish as pictured on top. Enjoy!
