Gluten-Free Pancakes

Everyone loves pancakes and I love a good gluten-free pancake recipe. Don’t get me wrong, there are plenty of gluten-free pancake mixes too, but depending on your household pancake consumption. The mixes can get expensive and why buy pre-mix when you can make it pretty quick at home. And if you don’t have buttermilk! Don’t worry all you need to do is mix one cup of milk with one tsp lemon juice or vinegar and set aside for about 5 minutes. That’s how easy it is to make your own buttermilk.

Ingredients
  • 1 1/4 cup all-purpose gluten-free flour
  • 1 tbsp granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 tsp cinnamon (optional)
  • 1 large egg
  • 1 cup buttermilk
  • 1/4 cup vegetable oil
Instructions
  1. In a medium bowl whisk together all your dry ingredients and set aside.
  2. In a small bowl, whisk together egg and sugar and vanilla. Until it’s light and fluffy.
  3. Add your buttermilk and vegetable oil and stir until just combined. Add your buttermilk and vegetable oil and stir until just combined.
  4. Add dry ingredients to your mixing bowl and whisk it about a minute or 30 sec with hand mixer.
  5. Heat griddle or skillet on medium heat.
  6. Once you’re cooking surface is hot, lightly grease, and drop on 1/3 cups full of. and cook until bubbles begin to form on the surface of your pancakes. Flip and cook until done.
  7. Add your favorite toppings and enjoy!
