Cranberry Orange Bread

This moist cranberry bread with fresh cranberries and a hint of orange zest and is topped with an orange glaze. It’s one of my favorite quick bread recipes to prepare because it always draws a crowd! When I think of the winter season, many flavors come to mind, but no flavor combination is more delicious than orange and cranberry. I love tart cranberries paired with sweet orange. It’s the original and I recommend making two loaves because trust me, it will disappear quickly! You can leave off the orange glaze if you're trying to cut back on sugar. Same bake time and temperature.

Ingredients
  • 2 1/4 cup cups flour
  • 3/4 cup cup sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup milk
  • 1/4 cup oil
  • 2 eggs
  • 1/4 cup orange juice (fresh squeezed)
  • 1 tbsp orange zest
  • 12 oz cranberries (3 cups)
  • For Orange Glaze
  • 1/2 cup powdered sugar
  • 2 tbsp orange juice
Instructions
  1. Preheat oven to 350 F degrees.
  2. Combine flour, sugar, baking powder, baking soda, and salt together in a large bowl.
  3. In a separate bowl, combine milk, oil, eggs, orange juice, and orange zest together.
  4. Add wet ingredients to the dry ingredients and stir just until combined then fold in cranberries.
  5. Place batter in a greased loaf pan.
  6. Bake in preheated oven for 65-70 minutes until the center comes out clean with a toothpick test.
  7. Allow bread to cool in the pan for 10 minutes. Carefully remove from pan and continue cooling on a baking rack until fully cooled.
  8. Orange Glaze
  9. Combine powdered sugar and orange juice. Stir until smooth. Add a bit more juice if needed to make a runny consistency.
  10. Drizzle glaze over the top of the bread. Let glaze dry for about 30 minutes before slicing. Enjoy!
