Cinnamon Swirl Coffee Cake

This cinnamon swirl coffee cake is a fantastic soft white cake with a trace of brown sugar and cinnamon. It's a perfect treat for a Sunday afternoon with your favorite hot or cold drink. My husband loves this coffee cake with a tall glass of cold milk.

Ingredients
    For Cinnamon Topping
  • 1/4 cup light brown sugar
  • 1 1/2 tsp ground cinnamon
  • For Coffee Cake
  • 2 cup all purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter (room temperature)
  • 1 cup granulated white sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup buttermilk
Instructions
  1. Preheat your oven to 350 degrees F. Butter a loaf pan. Line the bottom of the pan with parchment paper.
  2. In a small bowl stir the brown sugar with the ground cinnamon and set aside
  3. In a bowl, whisk or sift together the flour, baking powder, baking soda, and salt.
  4. In the bowl of your electric mixer or with a hand mixer, beat the butter until softened about 1 min.
  5. Add the sugar and vanilla extract and continue to beat, on medium-high speed, until light and fluffy about 2 minutes.
  6. Add the eggs, one at a time. Scrape down the sides and bottom of the bowl as needed.
  7. Add the flour mixture alternately with the buttermilk. Starting and ending with the flour. Beat the butter on medium-high speed for 2 min.
  8. Pour half of the batter into the prepared pan, smoothing the top with a spatula or spoon.
  9. Then sprinkle on the batter about half of the cinnamon-sugar mixture.
  10. Cover with the remaining batter and then sprinkle with the remaining cinnamon-sugar topping.
  11. Take a wooden skewer or knife and swirl the batter.
  12. Bake for about 55 minutes, or until a toothpick is inserted into the middle of the cake, it comes out clean.
  13. Remove from the oven and let cool on a wire rack for about 10 minutes before removing from pan. Enjoy!
