Chewy Oatmeal Cookies

Chewy oatmeal cookies are the best. I love making this to treat my coworkers once in a while, and they love it. I use lots of chocolate chips, raisins, nuts, and cinnamon in my oatmeal cookie recipe. These soft cookies are so easy to make. You can alter this recipe if you like. For example, you can use dried cranberry and white chocolate chips instead, especially during Christmas.

Ingredients
  • 1/2 cup unsalted butter (melted)
  • 1/3 cup granulated sugar
  • 1/2 cup brown sugar (packed)
  • 1 large egg
  • 1/2 tbsp molasses
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 cup quick-cooking oats
  • 1 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/2 cup raisins
  • 1/2 cup pecans (chopped)
  • 1/2 cup semisweet chocolate chips
Instructions
  1. Preheat your oven to 350 degrees F. Line a baking sheet with parchment paper and set aside.
  2. In a large bowl, cream butter and sugars until light and fluffy. Add the egg, molasses, and vanilla; beat well.
  3. Combine the flour, oats, baking soda, cinnamon and salt; gradually add to creamed mixture and mix well. Stir in the raisins, pecans, and chocolate chips. Scoop your cookie dough on the lined baking sheet.
  4. Bake the cookies for 9-10 minutes or until lightly browned. Cool on pans for 2 minutes before removing to wire racks.
