Beet and Avocado Salad
Simple and healthy, Beet and Avocado salad, sprinkled with pumpkin and sesame seeds, and drizzled with a lemon vinaigrette! No matter what time of the year or where I am, I always have avocado in my kitchen. So I love making this incredibly simple and easy salad almost all the time. For Lemon Vinaigrette

Instructions

Whisk together the rice vinegar, lemon juice, orange juice, zest, honey, olive oil, and salt in a small bowl. Set aside.

Cut the beets in 1-inch cubes. Place the beet cubes in a bowl and toss with a tablespoon of the vinaigrette. Cut the avocado into wedges.

Toss the salad greens with half of the citrus vinaigrette. Arrange the dressed greens on serving plates.

Place the beet cubes, avocado wedges, and sliced onions on top of the salad greens. Sprinkle with pumpkin seeds and sesame seeds—drizzle remaining vinaigrette over the salads.
