Simple and healthy, Beet and Avocado salad, sprinkled with pumpkin and sesame seeds, and drizzled with a lemon vinaigrette! No matter what time of the year or where I am, I always have avocado in my kitchen. So I love making this incredibly simple and easy salad almost all the time. - For Lemon Vinaigrette
Instructions
- Whisk together the rice vinegar, lemon juice, orange juice, zest, honey, olive oil, and salt in a small bowl. Set aside.
- Cut the beets in 1-inch cubes. Place the beet cubes in a bowl and toss with a tablespoon of the vinaigrette. Cut the avocado into wedges.
- Toss the salad greens with half of the citrus vinaigrette. Arrange the dressed greens on serving plates.
- Place the beet cubes, avocado wedges, and sliced onions on top of the salad greens. Sprinkle with pumpkin seeds and sesame seeds—drizzle remaining vinaigrette over the salads.
- Serve immediately. Enjoy
