  • Whisk together the rice vinegar, lemon juice, orange juice, zest, honey, olive oil, and salt in a small bowl. Set aside.
  • Cut the beets in 1-inch cubes. Place the beet cubes in a bowl and toss with a tablespoon of the vinaigrette. Cut the avocado into wedges.
  • Toss the salad greens with half of the citrus vinaigrette. Arrange the dressed greens on serving plates.
  • Place the beet cubes, avocado wedges, and sliced onions on top of the salad greens. Sprinkle with pumpkin seeds and sesame seeds—drizzle remaining vinaigrette over the salads.
